OMG what a surprise! We have been given “Cime di rapa” (a traditional southern Italian green vegetable related to Broccoli) straight from Bari. Sautéed in garlic, anchovies and oil just for few minutes it made a perfect sauce for our homemade orecchiette pasta! Hard to explain HOW GOOD it’s this ❤️

Orecchiette are a type of pasta typical of Apulia, a region of Southern Italy. Their name comes their shape, which resemble a small ear. An orecchietta has the shape of a small dome, with its center thinner than its edge, and with a rough surface. Like other kinds of pasta, orecchiette are made with durum wheat and water. The dough is rolled, then cut into cubes. Each cube is pressed with a knife, dragging it on the board and making it curl. The shape is then inverted over the thumb.
