Special lunch today! Wholemeal orecchiette with saffron, Tuscan sausage, red peppers, fresh thyme from the garden

When we don’t have any events and we have more time at home, we obviously love cooking and treating ourselves with some nice food. Cooking pasta for an Italian is always the most exciting thing to do, especially for me! This pasta recipe is very easy, super tasty & colourful. INGREDIENTS (Serves 2/3): a shallot, a crushed garlic clove, EVO oil, thyme, paprika, black pepper, salt, one red pepper, about 300g Italian sausage, Parmesan, 250g wholemeal Orecchiette pasta

METHOD: In a saucepan add oil, the garlic, finely chopped shallot, herbs and gently simmer for about five minutes on low heat; add finely sliced red pepper with some paprika, salt, black pepper and let it cook for about 10 minutes on medium heat; remove the garlic and the herbs, add the crumbled sausage and cook it for another 7 minutes. Fill half a glass with boiling water (from the pasta) and dissolve the saffron in it; when the pasta is ready, drain and add it to the saucepan with the saffron water; sprinkle a little touch of Parmesan cheese; shake it and BOOM…Ready to eat!
