INGREDIENTS (Serves 2/3): a shallot, a crushed garlic clove, EVO oil, thyme, paprika, black pepper, salt, one red pepper, about 300g Italian sausage, Parmesan, 250g wholemeal Orecchiette pasta
METHOD: In a saucepan add oil, the garlic, finely chopped shallot, herbs and gently simmer for about five minutes on low heat; add finely sliced red pepper with some paprika, salt, black pepper and let it cook for about 10 minutes on medium heat; remove the garlic and the herbs, add the crumbled sausage and cook it for another 7 minutes. Fill half a glass with boiling water (from the pasta) and dissolve the saffron in it; when the pasta is ready, drain and add it to the saucepan with the saffron water; sprinkle a little touch of Parmesan cheese; shake it and BOOM…Ready to eat!
