One of the most well-known Italian pasta dishes Pasta alla Norma is typical from the Sicilian cuisine. It’s very easy and quick to make. As a first step you need to fry a diced aubergine in extra virgin olive oil (be generous). In the meantime time make a very simple tomato sauce: in a saucepan sprinkle some oil and add a crushed garlic clove, after a couple of minutes, add one tin of chopped tomatoes and let it cook on low heat for about 40 minutes. Add the fried aubergines to the sauce and stir for a couple of minutes. when the pasta is ready transfer to the frying pan. Add the pasta to the sauce and toss well, adding an extra splash of the reserved cooking water and keep stirring on high heat for a minute, until the sauce thickens up again. Heat off, top it up with fresh basil leaves and grated ricotta dura (or pecorino cheese is good too!)
So simple, so fresh, so tasty.
